Public remain concerned about hygiene standards in restaurants

The European Cleaning Journal contains an interesting article about consumer attitudes to staff hygiene in restaurants.

It generally showed that there is still, overall, a low level of consumer confidence about food hygiene in restaurants and fast food outlets. Tork washroom products manufacturer SCA commissioned a survey of 4000 Europeans and found that 59% considered that restaurant and fast food premises should look clean and tidy before they go in. An astonishing 85% of Polish have opened the door and left again straight away because the premises did not look clean.

The majority of the participants directly linked dirty toilets to a high likelihood of the kitchen being dirty too. On a positive note about 81% do believe that the chefs and food handlers wash their hands before cooking and after using the toilet (although fairly recent UK Food Standards Agency survey data sadly indicates that in practice quite the opposite is true in the UK). They are not confident however about what chefs might do with food that has fallen on the floor!

If this is the state of current consumer confidence then doesn’t this justly link food hygiene standards to commercial advantage? If a restaurant is prepared to implement, adopt and then boast of its food hygiene standards, perhaps using audit, hygiene certification and of course social media networking sites, then they may just be hitting one of the customers biggest hot buttons.

 

Hand washing failure

A very interesting, or perhaps alarming, summary within the European Cleaning Journal has been released concerning the failure of food handlers to wash their hands. The survey was carried out by Initial – famous for wash-room services and supplies. In almost all countries surveyed over 70% of men and women were not washing their hands. And up to 25% of businesses were failing to provide soap dispensers. The consequences of poor or absent hand washing can be dire – or perhaps even diarrhoea! The hands are our main preparation “tool” and as such are a significant route of contamination of bacteria and food-borne viruses from faecal matter, dirty surfaces and raw foods. Food hygiene training has been around for a long time now – so the question has to be why are the figures so alarming? Well I’m afraid that it’s a fact that performing an hour or two’s training, or even a full day, and then just expecting all staff to function with exemplary personal hygiene simply does not work. Not without other controls in place such as management buy-in and good supervisory management. Third party audits can help – regular food hygiene audits have been shown to improve food safety culture amongst both management and staff. And a good, experienced auditor, who takes the time to explain carefully to staff why such controls are necessary and what the consequences are. Sometimes it just helps staff to be, and feel that they are being “policed” by someone who knows, and who has their best interests at heart too. The full article can be found here

Food Standards Agency report – Food safety behaviours in the home

The Food Standards Agency has released the final report called Food Safety behaviours in the home. This lengthy report makes fairly grim reading overall concerning people’s awareness of food safety and risk in the home when dealing with food. There are significant gaps in people’s knowledge concerning correct cooking temperatures, cross contamination prevention, correct refrigeration and thawing practices and knowledge of Use By dates. One part of the report states that “People‘s self rated level of their understanding of food safety was higher than that found when observed by researchers” which probably explains the lack of awareness of risk. Another reference in the report points to a study of barbecue and stir fry chicken in 30 homes showing no less than a 75% incidence of the food borne pathogen Campylobacter.
